If you have noticed by now, I love using monk fruit in my recipes! It is a great, zero glycemic index sugar substitute that works so well in many sweet treats. And these dark chocolate coconut almond energy balls are no different. They sweeten the chocolate coating to a nice dark chocolate sweetness, but more can be used if a sweeter chocolate is preferred.

Ingredients
Coconut Almond Filling
Desiccated Coconut-The thinly shredded coconut that desiccated coconut is works so well. When combined with the other ingredients, it packs so well together. Also, make sure to check the label for added sugar. Many dried coconut comes sweetened. Look for unsweetened coconut.
Almond Flour
Coconut Oil– When buying coconut oil, it is best to look for cold pressed, unrefined, and virgin. This means that there is less processing to the coconut oil and it is closer to its original state.
Honey– Raw honey is what you want, and local raw honey is even better!
Almond Butter
Sea Salt
Dark Chocolate Coating

Coconut oil– softened
Cacao Powder– Rich in antioxidants! Cocoa powder will also work here too.
Monk Fruit and Erythritol Sweetener-Zero on the glycemic index.

How to Make Dark Chocolate Coconut Almond Energy Balls



Step 1: Chop the almonds and place in a pan on low-medium heat. Toast for 1-2 minutes until they become fragrant. Add the desiccated coconut to the chopped almonds and continue toasting for an additional 30 seconds to 1 minute, stirring the whole time. Coconut that is shredded this small toasts very quickly, so keep an eye on it!
Step 2: Add chopped almonds, coconut, and almond flour to a medium bowl.
Step 3: Melt the coconut oil and honey in the warm pan that held the almonds and coconut. Allow to melt and then pour into the bowl with the dry ingredients.
Step 4: Add almond butter and salt to the bowl and mix well. Form the mixture into 12 balls and place on a plate or tray lined with parchment paper. Chill in freezer for 30 minutes.
Step 5: While the coconut almond balls are chilling, prepare the chocolate coating by mixing the softened coconut oil, cacao powder, Monk fruit erythritol sweetener, and salt in a small bowl.
Step 6: When the balls are finished chilling, cover each ball in the chocolate and return to the parchment lined tray. The chocolate will become firm because of the cold balls.

Step 7: Enjoy right away or return the tray to the fridge. The chocolate coating will melt quickly, so eat directly from the fridge or soon after removing from the fridge. Store in an airtight container in the fridge for up to 4 days.
